Our Vin Santo is produced in very little quantity and in the best vintages only, by following the rules of the traditional technique, although slightly modified. This dessert wine is mostly the outcome of the passion, attention and creativity of everyone who contribute to create it. Thanks to its high residual sugar, it is a classical dessert wine, matching with dry pastry, pastry with cream and tarts perfectly. Excellent with blue cheeses, such as gorgonzola and roquefort.

Harvest Report 2018

In general, after a mild and not very rainy month of January, starting in February there was also a much higher rainfall.
April, instead , was quite dry and hot , with temperatures higher than usual. Also in the months of May and June the thermal values and the precipitations were higher than the average of the period. All this has created a remarkable humidity which created the right conditions for attacks of downy mildew and oidium that have seriously engaged winegrowers with multiple and various treatments.
The months of July and August were characterized by unstable weather with brief peaks of temperatures above the average, interrupted by storms and some hailstorms. Generally speaking these months were cooler than usual and it delayed the vegetative the ripening of a few days.
However the months of September and October have passed favorably , allowing a regular and scheduled harvest. This period was characterized by warm and bright days, often windy too. The difference in temperature between day and night has favored the maturation of red grapes, , rewarding all late varieties from a qualitative point of view.
So we have been able to harvest grapes healthy and perfectly ripened , with good concentration ,rich in fresh fruity flavours and balnced acidity. Quantity was in the average.

Harvest Report 2017

The 2017 harvest was definitely a peculiar vintage, and undoubtedly one of the most challenging; yet the final result was excellent, if not great.
Budbreak started decidedly early because of a particularly mild winter, and with the vegetation already quite well developed at the end of April, a late frost occurred, which reduced the potential crop to a certain extent.
Then, after some rain at the beginning of May, we had one of the longest dry periods that had ever occurred in Tuscany, with particularly high temperatures during July and August. Luckily, the Rufina area, located in the northern area of Tuscany and close to the Apennines, was able to benefit from some occasional summer showers and more moderate temperatures compared to other areas, allowing the vines to withstand the drought and, above all, avoiding extreme water stress conditions.
At the beginning of September, the climate changed; there was some rainfall and the temperatures cooled considerably. This new situation enabled the plants to complete their ripening under normal conditions.
Harvesting was about 10 days early and took place as normal, in a dry, cool climate.
The crop was considerably smaller than average, partially due to the lower number of bunches but mainly because of the reduced size of the grapes. To worsen things further, the fruit yield was very low.
The wines we have obtained from the 2017 harvest, as well as being highly concentrated, well-structured, and rich in color as we expected, have surprised us by also maintaining intense and fresh fruity notes and providing good acidity. Therefore, it is apparent that we are able to obtain both young, fruity wines and wines suitable for a long ageing process from this harvest. So, this vintage will probably be remembered for both the scarcity of the harvest and the excellent quality of the wines produced.

Harvest Report 2016

After a fairly warm winter, budbreak occurred quite early; luckily, we did not experience any spring frost. Spring was cool and rainy, and this forced us to treat the vineyards several times in order to prevent the onset of downy mildew.
However, the rain did not disturb the flowering, and fruit set was quite abundant. The real summer arrived only in late June/early July, when temperatures rose and we had some prolonged dry periods.
However, temperatures never reached critical levels for the vines, which were also able to benefit from the abundant water reserves accumulated during the winter and spring. August and almost all of September were very sunny and breezy, but without ever reaching critical temperatures.
The vines were therefore in a state of very light water stress throughout the entire ripening period, which allowed them to reach particularly high quality peaks without altering the ripening process.
In September, the beginning of cool nights and the resulting significant temperature variation between day and night allowed the grapes to best develop their aromatic potential and for acidity to remain at levels that were not too low. The harvest, which took place without interruptions or disturbances due to rain, allowed us to pick grapes that were in perfect health and with an optimal level of ripeness.
Furthermore, the dry period in August and September also increased the ratio of skins to juice in the berries, thus allowing for particularly high levels of concentration in the musts. In short, the 2016 vintage has all the makings of one of the best in recent years.

Report Vendemmia 2015

È considerata una vendemmia memorabile: la vegetazione è iniziata non troppo presto, evitando di soffrire problemi con le gelate tardive.

La primavera ha avuto frequenti piogge alternate a periodi quasi estivi. Questo ha reso difficile gestire la difesa contro le malattie fungine, ma ha facilitato la fioritura e lo sviluppo dei giovani acini.

Dalla fine di giugno alla fine di agosto abbiamo avuto i classici due mesi molto caldi. Questi sono stati però interrotti a volte da temporali estivi che hanno fornito abbastanza acqua per evitare che le viti soffrissero la siccità.

Alla fine di agosto il tempo è cambiato, abbiamo avuto un po’ di pioggia, e poi è iniziato il tipico settembre toscano: soleggiato ma non troppo caldo, ventoso e con notti piuttosto fresche.

In queste condizioni le uve hanno raggiunto la piena maturazione e alla fine abbiamo potuto portare in cantina uve perfettamente mature, sane e concentrate.

Technique

Drying of the grapes until beginning of February. Soft pressure followed by decanting of the must, lasting for about two weeks.

Tasting notes

Antique gold colour with amber haues. Very intense, complex and persistant nose with dried fruits, vanilla, orange peel aromas and flavours, incense. On the palate sweet, full bodied, balanced and with a long finish.
